ABOUT THE WINE
Domaine Fillon & Fils is a family-run business, now run by the fourth generation. Family-owned and run since the early 20th century, the winery focuses on quality by owning its own parcels in prime locations around Chablis. Being a deeply rooted family in the area, they produce a wide range of wines.
TASTING NOTES
Made from 35-year-old vines, grown on Chablis’ quintessential Kimmeridgian soils, this 1er Cru is brilliant value. Made by maturing the wine on its fine lees for several months, this Chablis offers the key freshness one expects from a Chablis, with the fruit ripeness of the 1er Cru sight, and the subtle richness of the lees ageing. Notes of green apple skin, preserved lemon, almond skin, kaffir lime, key lime, candied sour pineapple and yoghurt. A sublime example of an opulent Chablis.
FOOD PAIRING
Seared wild scallops with white wine, raw Atlantic oysters with shallot mignonette and goat's cheese salad with anchovies.

Domaine Fillon & Fils is so old in Chablis, that they even have some planting of Pinot Noir, which is extremely rare in this part of France.
